Restaurant owner George Carson was taken aback when he discovered that one of his cleaners, Consuelo Ruiz, was sneaking leftovers from customers’ plates. George owned The Kettle of Fish, a prestigious New York restaurant that had been in his family for generations. While his manager, Colt Farlow, was in charge of day-to-day operations, George frequently dropped in unannounced to keep an eye on things. With tears in her eyes, Consuelo expressed her gratitude, deeply moved by George’s empathy and support. George told her, “One day, maybe you or your children will help someone else. That’s the true American Dream.”
